Spinach “No-Nut” Pesto

Yesterday I served N some of these and she smashed them! I don’t know if I can still call this recipe a pesto, since I have excluded nuts (for now), but it looks about the same so please don’t come at me!

It’s so easy to make – all my recipes here are, actually – and you can even make a whole batch and freeze them in cubes for up to a month! I’m very pro-freezing because it totally saves me on days I cannot cook something from scratch for her.

I’m planning to throw in some shredded chicken into this dish the next time I serve it. Does that sound weird or totally OK?
