Eggs. I love eggs. I can eats all day everyday. So I naturally serve N lots of eggs, especially for breakfast! Here are 5 ways I serve them to her:
Vege Scrambled Eggs
These are a way to sneak in some greens at the start of the day. Chop some carrots and spinach, add them to a beaten egg, dash of pepper and scramble in a pan with butter. YUM
Orange Scrambled Eggs
No, there aren’t any oranges in here! It’s cubed tomatoes and paprika that give it a slightly orangey look. Scramble them together with a beaten egg and a dash of salt (above 1yo).
Thin Egg Waffles
I was so excited to try this because we have a waffle maker and I seldom use it! Literally the easiest – beat an egg, dash of parsley, add in some shredded cheese, pour into the mould and cook!
Omelette Noodles
These are fun because they’re just omelette strips but you can cut them as thin as you like and serve them like noodles! Usually for this I keep it plain – just egg, pepper and now I add a bit of salt – so that the form stays when I cut them up.
French Toast Stars
Also one of my favourites because they almost look like a snack! Shape the bread before you dip into a mix of beaten egg, pepper, salt and cinnamon then pan fry with butter.
All of them are soooo easy to whip up in the mornings. My go-to for sure. Seriously, I freak out when we’re out of eggs.
